Brinner Remix (and a recipe for breakfast pizza)

At Las Casa Darcy, brinner is a regular go-to on the weekly meal plan.

Brinner * Breakfast foods that are so scrumptious, but no one really has time to make them before rushing off to work, so they make for delicious, inexpensive dinner options instead!

A couple of weeks ago, we served a "Brinner Remix" at one of our weekly sibling dinners. We gorged on a Pancake Bar and experimented with a new recipe, Breakfast Pizza.

strawberries
raspberries
blackberries
bananas
chocolate chips
peanut butter (not picuted)
butter & syrup - duh (not pictured)



Mr. Darcy is the Flapjack King. 
No, seriously, I've never loved anyone's pancakes more than his.
Because gluten does weird things to my body, I shy away from it as much as I can. Have you ever tried Pamela's gluten free baking mixes? SO yummy! Like, we love this pancake mix more than any others! (Pamelas is sold at Publix, Kroger, & Whole Foods.)


And for the experimental recipe... It was so good. I mean ridiculously good.
But after you see the ingredients, how would it not be? (And soooo easy.)
Yes, of course I'll share the recipe with you...


Breakfast Pizza:

Ingredients:
1 lb. sausage, browned
1/2 green pepper, chopped
1/2 onion, chopped
1 can white sausage gravy
2 c. mozzarella cheese, shredded
10 oz. fancy shredded hashbrowns
8 eggs, scrambled
Publix multi-grain pizza dough

Idea:
We didn't add bacon, but that would've been yummy, too.

Directions:
Prep pizza dough - add flour, stretch, flip... You know the drill.
Brown sausage in a stovetop pan (do not over cook. This will cook more in the oven.)
Chop the green pepper and onion.
Scramble the eggs (soft scramble- they'll cook more in the oven.)

Layer the pizza in this order:
sausage gravy
eggs
hash browns
sausage
onion
green pepper
cheese (cover it!)

Bake the pizza at 425 for 15-20 minutes, and voila!

This is not the healthiest recipe, but it's comfort food at its finest!

Homemade Salsa

Anyone else out there think they could eat Mexican five nights out of the week and never tire of it? 

Yeah, me too.

I just love Mexican food, and much to my husband's demise, I could eat it just about everyday.

Chips and salsa is my favorite food group. (And don't tell me that's not a food group.)

It is.

Anyway... Thanks to my dear friend Heather, this super-easy-and-even-more-delish homemade salsa recipe has saved my life. And we make it at least once every couple of weeks. (Thanks for sharing, Heather!)

You will need three things: a food processor, a craving for fresh salsa, and about seven minutes.

Okay, that's not all.

But the recipe doesn't call for much more than that!

Here we go:

5 roma tomatoes
1/2 onion
2 avocados
pinch of salt
2 tbsp lemon juice
squeeze of fresh lime
fresh cilantro



First, I slice the (half) onion into fourths. Then I throw it in the food processor. 

Next, I slice the roma tomatoes into halves, and I throw them into the food processor.

*Note: How chunky or smooth your salsa becomes is up to you! Pulse for as long or as short as your little heart desires! 


Finally comes the salt, lemon juice, cilantro, and hint of lime juice! These quantities can all be up to your tastebuds, as well! Play around and see how much or little you prefer.

I add the avocados last, because I prefer to not end up with guacamole-salsa. As little pulsing as possible for my avocados, please.



And there you have it, folks!

Use a spatula to scoop out this deliciousness, put in a bowl, and the most important part...

Can I have a little jalapeno on mine?

Okay, y'all... this recipe is legit. 
It comes from the kitchen of Melissa Guthrie, better known as, my Mama. 
It's super low-maintenance, 
extremely tasty, 
and will satisfy any Mexican--lovin'-foodie on a summery Thursday evening. 

Here goes...



Homemade Chicken Enchiladas

You'll Need:
1 can cream of chicken soup
1/2 cup sour cream (light)
2 T. butter
1/2 onion (chopped)
1 tsp. chili powder
2 cups chicken (cooked, diced)
1 (4 oz.) can chopped green chiles
8-10 (7") flour tortillas
1 cup shredded Monterey Jack/Cheddar cheese

*Optional:
parsley for garnish
jalapenos for topping
chips & salsa/guacamole on the side

To Do:
1) Preheat oven at 375 degrees.
2) Stir together soup and sour cream; set aside.
3) In a 2-quart saucepan, melt butter. Stirring often, cook onion and chili powder on medium heat until the onion is tender.
4) Stir in chicken, chiles, and 2 T. of soup/sour cream mixture (from step 2). Remove from heat.
5) Along the center of each tortilla, spread 1/4 cup chicken mixture and fold sides over. Place seam-side down in a 9x13 pan.
6) Spread remaining soup mixture over top of enchiladas.
7) Cover pan with foil and bake for 15 minutes.
8) Remove pan from oven and sprinkle cheese over the top. Place pan back in oven uncovered, cook cook for additional five minutes (or until cheese melts).
9) Garnish with parsley, jalapenos, salsa, or guac.
10) Dig in! Feel free to give in to your inner salsa dancer.

Homemade Chicken Alfredo Pizza

One of our most favorite activities to do as a couple is cook! Our kitchen is our favorite room in our townhouse, and when Jon and I cook together three things are involved: music, dancing, and newly invented recipes. 


This Darcy Recipe was created during our engagement season, and it has since become a staple in our home. It's the perfect dish for an in-house date night (usually accompanied with candles and a movie) or when entertaining friends (usually accompanied with games and laughs). 


Last night we invited my brothers Parker and Jordan, P's girlfriend Heather, and one of BFFs Nicole over for dinner. I had prep-bowls filled with pizza ingredients ready for the boys, and as we munched on an Italian baguette dipped in olive oil and spices, we put the boys to work.


Jordan had already made this homemade pizza with us before, but Park was a first-timer. It was so interesting to see how meticulous they were at adding the toppings!



In order to save money for my GORGEOUS engagement ring, my Love worked a second job at Dominoe's. Two great things came from his experiences there: 
1) An absolutely stunning ring!  :) 
2) A husband who is incredible at flipping pizza dough! (Should've taken a picture of this)


Here are the ingredients needed for this delish dish:


2 chicken breasts, grilled and sliced
1/2 bell pepper, sliced
1/2 onion, diced
1 bag Mozzarella cheese
1/2 jar Bertolli mushroom alfredo sauce
Publix five grain pizza dough
(If desired, 1/2 tomato, diced)

Steps:

1) About 1 - 1 1/2 hours before cooking, set the pizza dough out to become room temperature
2) Preheat oven to 450 degrees
3) Grill 2 chicken breasts (the George Foreman is a lovely invention)
4) Sprinkle flour on a clean kitchen countertop, and began kneeding the dough; flip it, stretch it, kneed     
    some more
5) Place pizza dough on your kitchen stone (or cookie sheet)
6) Using a spoon, spread the alfredo sauce evenly across the circular dough; leave about 1/2 inch 
     around the circumference of the pizza for yummy crust
7) Layer a thin layer of cheese
8) Add the chicken slices, spread out evenly over the pizza shape
9) Distribute bell pepper slices and onion dices (and tomatoes) evenly around the pizza; don't be timid-
     you can't mess this up!
10) Use remaining cheese to layer a thick cheesy top layer!
11) Cook pizza (uncovered) in oven for 12-15 minutes 
       (With a stone- 15 mins; Cookie sheet- 12 mins)
12) Slice into rectangular pieces, and enjoy! 

*Depending on how hungry you are, 1 pizza usually serves 4 people.
*Serves great alongside a Caesar salad  :)



We enjoyed a great evening last night, and were soooo stuffed after this delish dish!
